雞隻副產物之加工利用製程設計:循環經濟觀點

摘要

近年來全球環保意識抬頭,循環經濟成為新興議題,透過設計使得產品再加利用創造新價值。家禽產品加工過程中會產生許多副產物,營養價值極高,但多數加工副產品主要作為飼料,卻無較高利用價值,因加工不易導致附加價值較低。雞骨當中富含鈣質,鈣質是人體不可或缺之元素,本研究將以肉雞骨頭作為加工對象,設計骨粉製程,開發人體可食用之產品。創造加工副產物附加價值。本研究使用粉末化設備具溫度、壓力、時間與監控等系統模組,確保產品品質,並對後續產品進行經濟效益分析。

ABSTRACT

As the recognition of environmental protection raised, addition of product value design on the viewpoint of circular economy becomes a new issue. By-products generated in manufacturing poultry products are in a high ratio with rich nutrition but most of them are used as feeding material due to lack of manufacturing technology.This study designs a powder manufacturing process to create value for poultry bone.Factors considered in the design of powder equipment modules are temperature, pressure, and time horizons with their interaction. Also an analysis for manufacturing effectiveness is conducted under quality conditions.
