食品標籤資訊與消費行為之關係-以某科技大學為例

摘要

  食品安全在國內外都是相當重視的,讓消費者認識和瞭解食品標籤資訊是一個重要的安全和健康問題。本研究欲探討與食品標籤資訊及消費行為之相關性,並用結構方程模型驗證其因果關係,希望藉此促進學生族群的健康生活型態。研究結果顯示,學生族群裡外食次數相當頻繁,對食品標籤資訊上的保存期限最為重視,而女生則比男生更重視食品標籤資訊,且對食品標籤資訊重視程度愈高則會有愈正向的食品消費行為。本研究建議教育單位亦應於生活教育中加強食品標籤資訊方面知識,以提升學生對食品添加物的熟悉程度與風險認知。

ABSTRACT

  Since food safety at home and abroad is very important, awareness and understanding of food labeling information is an important safety and health issues. In this study, we will discuss the relationship between food label information and consumer behavior and also use the Structural Equation Model (SEM) to verify their causality. We wish this can promote the healthy lifestyle of the students. The results showed that students often eat out and the shelf life is the most important on food labeling information. The consumers will have a more positive food consumption behavior when they are more attention on food labeling. The study recommended that educational institutions should strengthen the knowledge of food label information to enhance students to understand the risk of food additives.
